Abstract:
The business of local signature food such as bakeries is increasing rapidly nowadays. To survive in the
competition of these businesses, it is necessary to make a business planning. Carrot cake is a sponge cake that has
vegetables as additional ingredients which has a soft texture with additional grated carrots. The purpose of this
study is to systematically describe the business model in the business concept of canvas business models for
processed products from vegetables on bakery products and to give an alternative for local signature food from
South Kalimantan. Based on questionnaires distributed to the panelists, there was no difference in preference for
both experimental samples, 43,5% and 37% of carrots, therefore the sponge cake products chosen to be marketed
are the one with the addition of 43,5% grated carrots. The composition was chosen because it was preferred by
panelists. Business model preparation using the business model canvas was done by collecting information from
100 respondents around Banjarbaru. Customer segments for this business are tourists, workers, and South
Kalimantan citizens who travel. Value proposition of this business is a healthy snack because of carrots addition,
the use of original flavor and no sweetener is used, its location is also easy to access and the products are always
available.
