Palm sugar is a type of plant which locates the sixth rank in the agro industry priorities featured in South Kalimantan in 2015. The plant growing in South Kalimantan is unique due to the height of 18 m above sea level and has already produced excellent sap in terms of brix levels and yield so it can be developed in a sustainable manner into innovative products of palm sugar. The purpose of this study was to conduct downstream palm sugar and commercialization of innovative start-up further into the core industries in a region under the framework of inclusive development based on the leading commodity wetlands. The methodology developed starting from determining the efficacy of medicinal plants which have passed the ACUC stage. Furthermore, the enrichment of bioactive compounds in the innovative production process of palm sugar was conducted referred to the SNI product quality testing and processing procedures applying the ASEAN Food and Beverage Standard. The results obtained showed that the start up of innovative palm sugar enrichment of bioactive Tabat Barito had a unique selling proposition (USP), especially in terms of quality, diversification of products, warranty, image, trust and place. The added value of the ratio exceeds 15% is very interesting especially for palm sugar producers and farmers.
