One of the most important steps in paddy postharvest handling in regard to the head rice yield is drying. The research aims at providing a scientific view through a literature review on paddy drying theory; and a gneera1 description through afield survey on paddy drying practices in South Kalimantan. Literature review and field survey shows that the suitable paddy drying method in South Kalimantan is successive su drying. The possibilities for the adoption of mechanical dryers must take into account the low paddy volume brought in by independent farmers, the lack of uniformity in the incoming paddy moisture content, and the high number of rice varieties that must be handled by a single drying facility.
